Basil Gone Wild? Try This

If you live in a place where basil grows like a weed during the summer (or if you don’t, and you’re dreading the loss of your precious plants come fall), then we have the perfect solution for you!

Freezing basil the perfect way to preserve it. Yes, that’s right… Unlike lettuce and a number of other green leafy vegetables that you might have in your garden, basil freezes beautifully.

In this great tutorial by Gardening Channel, there are step-by-step instructions for freezing your basil and using it later – with all of the wonderful aroma and flavor perfectly preserved.

We love to do this with our extra basil, and enjoy the equivalent of fresh, organic basil all year long (without paying for it at the nearest Whole Foods in the middle of winter)! And, we’ve found that pesto made with frozen basil doesn’t oxidize like fresh basil pesto does – and you can skip the added step of blanching the leaves.
