Curly Kale Salad Recipe:

2 bunches of curly kale
1/4 sweet onion
Optional: red cabbage chopped fine or other salad fixings for extra flavor and decoration
Salt

DRESSING:

2 TB olive oil
2 TB fresh squeezed lemon
1 clove minced garlic
1 1/2 TB maple syrup

Instructions:

  1. Strip kale leaves from stems and tear into small pieces
  2. Salt kale and massage well with hands
  3. Chop onion fine and add to salad
  4. Mix up dressing and add to salad
  5. Massage again and serve fresh

NOTE: When complete add salt and lemon to taste. Not every kale bunch is created equal so have fun and find out what the right amount of dressing and seasonings work best for you!
